Rumex

Grape variety: Nerello Mascalese 100%.
Denomination: Etna Doc.
Soil, altitude and location: The vineyard is located on the North slope of the Volcano, at an altitude of 680 meters above sea level, in Contrada Pontale Palino.
The soils are volcanic, composed mainly of sand, and some gravel.
The vineyard is a natural “clos” encircled by Sciara (mounds of magmatic scoriae formed along lava flows).
Year of implantation and training system: The vineyard, over a century old, is trained in a classical Alberello Etneo (bush-tree) system, and survived a massive volcanic eruption in 1911.
Harvest and fermentation: Manual harvest in the early morning and delivery to the cellar in 10 kg crates. After destemming, the grapes ferment in small tanks under uncontrolled temperature. During maceration, which lasts10-12 days, daily breaking up of the marc are carried out by manual punching down. After racking, malolactic fermentation is carried out in 500 and 300 liter oak tonneaux with indigenous lactic bacteria.
Maturation: Ihe wines are aged for 16 months in 500 and 300 liter French oak tonneaux. The wine then ages for 2 months in concrete tanks before bottling. After an additional 6 months in bottle, the wine is ready for release.
