Grape variety: Carricante 100%
Soil, altitude and location: The vineyard sits on the Eastern slope of Mount Etna, within the town-limits of Sant’Alfio, and rises to an altitude of 900 metersabove sea level. The Ionian sea is a major influence on the eastern slope, bringing wind, rain, and cloud cover.
The soils are volcanic, composed of gravel and mainly sand.

Year of implantation and training system: The vineyard was planted in 2008, trained in the counter-espalier system, and pruned in Guyot system.
Harvest and fermentation: Manual harvest in the early morning and delivery to the cellar in 10 kg crates. After destemming, the grapes are immediately and gently pressed. After 48 hours of natural sedimentation, the juice ferments in stainless steel with selected yeast.
Maturation: The wine is aged on fine lees for 12 months in 500 and 300 liter French oak tonneaux, during which time weekly battonage is performed. After another 8 months in bottle, the wine is ready for release.
